This is a simple, no fuss, and easy acorn squash recipe. When using the microwave this squash is ready in about 15minutes.
I bought a half dozen acorn squash at my local farmers market, before they closed down for the season. They keep really well in a cool dry basement for at least a couple months. Maybe longer, but they don’t last that long around here.
Some people refer to acorn squash as pepper squash. But whatever the name, it’s a very tasty squash, and one of my favorites.
Acorn Squash
Ingredients
- 2 tablespoons butter
- 2 teaspoons brown Sugar
- 1 teaspoon cinnamon
- Large pinch nutmeg
- Pinch salt
Instructions
- With a very sharp knife, cut squash crosswise or lengthwise and clean out seeds with a spoon.
- To make them sit nicely on a plate, cut a little piece off the bottom of each.
- Melt about 2 tablespoons butter, and drizzle over both halves, followed by brown sugar, cinnamon, nutmeg and salt.
- Microwave on high for 10 – 12 minutes, then let the squash sit for about 3 minutes before removing from microwave. Vegetables still cook during this sitting time.
- Grab a spoon and dig in!
