This is a nice refreshing salad. My Mom made this a lot when I was young, maybe it was because we had a huge vegetable garden, so when a certain type of vegetable became ripe we had a lot of it.Any type of cucumber can be used for this recipe.
If cucumbers are very large and seedy, cut in half length-wise and scrape seeds out with a spoon. If I’m making a small bowl of this I just use a good carrot peeler and slice off thin strips in no time at all. It doesn’t matter how thick or thin the slices are, it’s all personal preference.
All you need:
2 long English cucumbers, peeled and thinly sliced
1 teaspoon salt
½ cup Miracle Whip or Mayonnaise
3 tablespoons vinegar (any flavored vinegar will do)
Optional – 3 tablespoons white sugar

Mix cucumbers and salt. Let sit for ½ hour or more, then drain out juices to prevent a very watery salad. Add the rest of the ingredients and toss well.
Cucumbers will become soft and easier to mix if left to sit another 15 minutes.

Garnish with some thinly sliced onion, dill, or tomato, and sprinkle with paprika
