Need to up your fiber intake? Then try these date and bran muffins with a hint of orange flavouring, good for you and tasty too!
Ingredients:
1 cup all bran cereal
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
½ cup sugar
Pinch nutmeg
1 egg
¼ cup cooking oil
¾ cup butter-milk
3 tablespoons orange juice
1 teaspoon orange rind
1/3 cup fresh or frozen cranberries, chopped
1 cup chopped dates
Directions:
Mix dry ingredients together in a bowl. In a separate bowl mix wet ingredients. Pour dry ingredients into wet ingredients and mix just until moistened.
Line a muffin tray with paper baking cups, fill 2/3 with muffin mix.
Bake at 400°F for 20-25 minutes. Makes a dozen muffins.
