Pasta is on my top 10 list of favourite foods. This recipe is so easy that any first time pasta maker will be pleased with the result.
So what’s with the making of a well in the center of the flour thing? Who knows, that’s the reason I never made pasta, the process seemed very odd and difficult to me.
In this recipe I do it the other way around where I add the dry ingredients to the wet ingredients, so much easier.
Using hard flour gives a firmer result, using soft flour makes a more fragile and softer noodle. I like to experiment with different flours that give my pasta a different flavour and texture. In this recipe I used semolina flour and spelt flour which I picked up at the local health food store. The key to finding your perfect pasta is to try different combinations of flour.
Ingredients:
3 eggs
1 teaspoon salt
1 tablespoon Olive oil
1 cup Semolina flour
1 cup spelt flour
Directions:
In a medium sized bowl mix eggs, salt, and olive oil, with a fork. Combine both flours. While mixing eggs with fork, slowly add flour till you can no longer mix with the fork. Using hands, knead dough on counter until a smooth ball is formed.
Cover the dough with overturned bowl on counter. Let dough rest 20 minutes.
Roll out dough as thin as desired. I used a pizza cutter to cut the pasta dough into wide strips.
Cook pasta in boiling salted water for 5-8 minutes.
