Lime-Bar

This is a delicious, attractive, and somewhat tangy bar. When baking with limes, I found that the finished product doesn’t look very green, so just to let everyone know that these bars are made from limes I add a wee bit of green food coloring. But of course you can leave the food coloring out.

Lime Cheesecake Bars

Ingredients

  • BASE CRUST:
  • ½ cup kamut flour or all-purpose flour
  • ½ cup hazelnuts or almonds toasted and finely ground
  • ¾ cup all-purpose flour
  • ½ cup sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup butter
  • --------------------
  • CREAM CHEESE LAYER:
  • 1 pkg 250g cream cheese, softened
  • ¼ cup sugar
  • teaspoon vanilla
  • 1 egg
  • --------------------
  • LIME TOPPING:
  • 1 ¼ cups sugar
  • 1 ½ cups water
  • cup cornstarch
  • 3 egg yolks
  • 2 teaspoons grated lime peel
  • ½ cup lime juice
  • 1-2 drops green food coloring

Instructions

  • Directions for crust:
  • Mix all together and press into a 9×13 baking dish.
  • Bake crust at 350°F for 10 minutes

  • Directions for cream cheese layer:
  • Beat all ingredients together until smooth. Spread over baked crust layer.
  • Bake at 350°F for 15 minutes

  • Directions for lime topping:
  • Extract juice from the limes with a juice extractor (pictured below)
  • Carefully stir in a bit of green food coloring until you get the desired shade of green.
  • In a saucepan on medium-low heat, whisk together sugar, water and cornstarch. Slowly whisk in egg yolks. Raise heat to medium and whisk until thick bubbles form and filling is very thick and glossy. Remove from heat, whisk in lime zest and lime juice.
  • Spread evenly over cream cheese layer.
  • Coconut topping:
  • Sprinkle coconut over top of lime layer, and put in the oven at 350°F for about 5 minutes until edges of coconut slightly brown.
  • Chill and cut into squares.
  • This bar freezes well.
