Quick and delicious, this serves 2 people on its own.
Ingredients:
3 tablespoons olive oil
2 cloves garlic minced
½ teaspoon salt
½ teaspoon pepper
1 teaspoon dried pepper flakes
2 cups raw baby spinach leaves, chopped
3 cups cooked pasta
3 tablespoons parmesan cheese
¼ cup feta cheese
Directions:
In large skillet, sauté garlic in olive oil. Add seasonings and chopped spinach. Cook spinach until leaves are slightly wilted. Add cooked pasta and toss all together. Transfer to serving bowl and sprinkle with feta and parmesan. Serve.
