
This method uses a microwave to cook the pumpkin. It’s quick and easy to prepare, you’ll never use another method again it’s that simple.
First find yourself a nice ‘pie pumpkin’, the flesh is a bit sweeter and slightly more tender than the large carving pumpkins.

Cut the pumpkin into chunks and scrape off the seeds and stringy stuff. Save the seeds for toasting like in my post for Salty Garlic Pumpkin Seeds.
Microwave a few pieces at a time for 10 minutes, let sit for a minute then check for tenderness by cutting into a piece. If needed, microwave another 10 minutes and so on until it feels soft.
Scrape flesh from shell and puree in a food processor and its ready to use in your favourite Pumpkin Pie Recipe, Pumpkin Scones or Pumpkin Muffins etc.

One pie pumpkin will yield approximately 5-6 cups pumpkin.
